One of Tyler's favorite recipes and one that you feel great about feeding your kids. This one is called "Eat Your Greens" and awesome recipe that includes three different green veggies.
Here is the recipe
1/2 cup chopped onion
1 tablespoon unsalted butter
2 medium potatoes, peeled and cubed
1 1/2 cup vegetable stock or water
1/2 cup chopped broccoli florets
1/4 cup frozen peas
1/2 cup fresh spinach, washed and stems removed
Saute onions in butter for 5min or until soft (not brown).
Add potatoes to the pan and pour in stock or water. Cover and bring to a boil and cook for 10 minutes.
Then add peas and spinach and cook for 3 minutes more.
Puree with as much of the cooking liquid as needed for your baby's consistency.
Add Puree to ice cube trays.
Cover ice cube trays with plastic wrap and freeze.
Pop out cubes from ice cube trays and place cubes in large 1 gallon ziploc bag and place back into the freezer.
Pop out as many cubes as your baby will need to eat. I also add a couple of tablespoons of Tofu to this recipe to add some protein. Enjoy!
